Also known as the Vegetable Oyster, this purple flowered variety has smooth skin and long slender roots. Easy to grow but slow to produce roots. Cook the root with skin on and peel once tender.
The flower buds with around 100mm of stem, and new shoots have an excellent flavour and can be cooked like asparagus.
